The existing cellar is
in the process of being transformed into a boutique
cellar which would meet modern standards, enabling
winemaker Christoph Hammel to produce pinnacle
wines. A partnership has been created with Christoph
who makes wines in their 300 year old winery,
another success story in Germany.
Christoph is a well seasoned winemaker in South
Africa who started working with names such as
Kevin Arnold from Waterford, then from Delheim,
Stevie Smit from Koopmanskloof and Nico van
der Merwe from Saxenburg. He is familiar with
South African conditions, has great talent and
best of all has a superb passion for wine and
food. He strives to mainly produce wines which
accompany food at affordable prices and this
philosophy has the benefit of moving substantial
volumes.
Christoph has selected fine young winemaking
talent, a student from Geisenheim, to assist
him on Klawervlei. Sebastian Gerricke loves
local conditions and he too has an extraordinary
passion for the winemaking process. This team
is one to be proud and one to be watched for
future successes.
It is further proposed that the cellar be converted
in such a manner that
landowners could make use of the maturation
cellar, for intimate functions,
amongst the oak barrels. Keeping in mind that
the restaurant would be in
close proximity to the cellar this would also
extend the capacity of this
facility.
